rarely comes out of her shell and other questions

hi i have 2 star tortoises...one is quite active and the other one hardly comes out of her shell..she just comes out to eat..i even took her to the vet he said she's fine ..guess shes little shy as its been just 4 days ..i also want to know they keep excreting something which is white in colour..can you yell me what is it? do they have to excrete daily...first one loves lettuce & the 2nd 1 loves tomato is it fine..it wont harm them right..please reply thank you
